Beet Cake



After watching this mesmerizing video I just have to make this cake! The music, the showing of step by step and all the details were just beautiful. Ahh, and when the chocolate melted...mmmm....

Todays breakfast:

I am a big fan of oatmeal, though on it's own it can be quite boring. I loveto find new ways and different methods to making it, and finding new combinations. So today I wanted to try a new twist to my oatmeal. Usually I like my oatmeals to be a bit firm and therefore use less water than recommended, but today I opted for a more voluminous and runny variation. I tell yah, it was delish!!



You need:
  • 1/3 cup/30g Oatmeal
  • 1 cup/2.4dl  liquid (I use 2/3 water, 1/3 milk)
  • 1 Tbsp Chia seeds (not necessary)
  • 2 Tbsp
  • 1 tsp sweetner (honey, maple syrup, sugar etc)
  • 1/2 - 1 tsp Vanilla powder or/and cinnamon 
  • If wanted; frozen berries (I used wild berries mix)
For garnish: almonds, walnuts, chocolate, milk, cinnamon

First you mix the dry ingredients, except the chia seeds, and mix well. Then you pour in the liquid and sweetner, I used maple syrup (adds some spicyness), and stir. Microwave it for 1,5 min and then take it out. 

Add more liquid if needed before mixing in Chia seeds (You could sub with flax seeds or use less water). Then you push a few frozen berries down into the oatmeal and microwave it until wanted consistency. Mine were perfect after 30 seconds. The thing about oatmeal is that the more you microwave it, the more it rises and gets more voluminous, so be careful that it doesn't spill over the edges.

Since I am a bit impatient a pour milk over my oats when they're microwaved so that they coole down faster, also it tastes good. Then I garnished it with a handful of sliced almonds and chopped walnuts and a few pieces of chocolate and grains. You could really pour anything over it: yoghurt, cereal, muesli, cottage cheese, ricotta, berries, fruit, brown sugar/honey/maple syrup/agave etc.

This is a filling and nutritionous breakfast but could easlily slip into the role of a dessert (especially if topped with maple syrup). And really it diddn't need alot of work, it just seem so because of my prolonged explanation :P

Genius I tell you...

I think this just saved me loads of trubble. My memory isn't the best and I always seem to misplace my USB-pins. After looking for it like a mad man, I end up buying a new one. So much so, that the cashier recognizes me and asks if it's the regular this time too. Embarresingly it always is...
So now I'm going to save me and the cashier some time an buy this so that I hopefully won't lose it again. It's quite pricey but hey, it's supercute too...

Post nr.1

For the first time ever, maybe caused by all the free-time of summer break, the though of starting a blog popped into my head. So I impulsivly started one and now, well, I'm not really sure yet under which category it falls but I will basically post what enspires me, fashion, music, movies, books, food ++. Food is actually the main reason the thought came to mind, it's a great way to keep track of yout recipes, what worked, what needs to be improved and etc. And also to keep myself busy when i've got nothing else to do (or that i want to do :p)
